Ingredients

  • 1/2 kg flour (3.5 cups)
  •  1 tablespoon dry yeast
  •  1/2 tablespoon sugar
  •  1/2 tablespoon salt
  •  1/2 tablespoon garlic powder
  •  1.5 cups warm water
  •  1/4 cup olive oil
  •  3 tablespoons Za’atar

Let's do it!

Place the yeast with sugar in a small bowl, add warm water and wait a few minutes until the yeast starts to rise

In a large mixer bowl place flour, salt, garlic powder, olive oil, add the water  and mix in low speed until a uniform dough is obtained about 10 minutes

Cover the bowl with plastic wrap and towel. let the dough rest in room temperature for an hour to an hour and a half, until it doubles in size.

Divide the dough into 12 balls. Cover with a towel for 15 minutes.

Preheat oven to 410 F degrees

In a small bowl place 1/4 cup olive oil with  a teaspoon of salt

Roll each ball into a flat pita about 4” diameter, place on parchment paper on a baking tray

Wait for half an hour till the pita bread will rise.

Use a glass and with its bottom push gently in the center of the pita to create a socket.

Place the pitas in the oven for 3 minutes and remove immediately. Place only one baking tray at a time, Place the baking tray in the center of the oven (not too close to the top of the oven so that they do not burn).

Spread on top of each pita olive oil with a brush and sprinkle generously Za’atar
Turn the oven to a broil position at 410 F degrees place again the pitas in the oven (now with the oil and Za’atar)  for another 2 minutes, pay attention it can get burned easily, watch it carefully.
