- 2 large onions finely chopped
- 3 tablespoons olive oil
- 1.5 teaspoons salt
- 1 teaspoon sugar
- 1 teaspoon black pepper
- 1 tablespoon cumin
- 1 tablespoon sweet paprika
- 1 teaspoon hot paprika
- 1 tablespoon instant soup powder
- 2 medium carrots grated
- 1 zucchini grated
- 2 cups washed green lentils
- 5 cups boiling water
Let's do it!
In a large pot, place the chopped onions with olive oil, cook until golden, add salt, sugar and black pepper and fry for another 2 minutes.
Add cumin, sweet and hot paprika, soup powder and mix.
Add all the grated vegetables and mix well for about two minutes.
Add the lentils and boiling water, Cover, lower the heat to medium and cook for about an hour or until the lentils are tender.
Taste and add salt and pepper if necessary.
If the soup is too thick you can add another cup of boiling water and cook for another 5 minutes
