Ingredients

  • 2 Bun
  • 2 egg
  • 4 tomatoes
  • 1 red or green pepper
  • 1 hot pepper
  • 4 crushed garlic cloves
  • 3 tablespoon olive oil
  • 1 tablespoon sweet paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sugar
  • Salt and pepper

Let's do it!

First, we have to prepare the cooked tomato salad (matbucha)

Cut tomatoes and red pepper to cubes and slice the hot pepper.

In a pan (with lid) over low medium heat we add olive oil and crushed garlic cloves, cook it till it gets golden.

Add the sweet paprika and cumin, stir for 2 minutes and then add tomatoes, red pepper, and hot pepper, keep stirring and add 1/2 teaspoon of sugar. After 5 minutes add the salt and pepper and leave on medium heat, cover the pan, stir every few minutes, cook it for 45 minutes till the red pepper softens.

 

Cut the top part of a bun, about 2” from the top. Remove gently the dough from the bottom part of the bun to make room for the cooked tomato salad and egg. Be careful don’t remove all dough completely.

 

Heat oven to 375 f degrees.

Place cooked tomato salad inside the bun and on top of it add the egg, sparkle salt, and pepper on top of the egg.

Place the bun on a baking tray covered with a baking sheet. Insert to the heated oven for 15 minutes till the egg is ready.
