• 2 eggplants sliced
  • 1 teaspoon salt
  • 4 tablespoons olive oil
  • 3/4 cup Pizza sauce
  • 1.5 cup shredded Mozzarella cheese
  • Sliced mushrooms
  • Green olives
  • And other toppings you love

Let's do it!

Preheat oven to 385 F degrees.

Slice the eggplant to 1/2 ” slices.
Place them on a tray and sprinkle salt on top.

Let it stay for 30 minutes.  Wash them and dry.

With a brush apply olive oil on each slice (both sides), place them on baking sheet over a baking tray.

Insert to the heated oven for 30 / 35 minutes till it gets softened.

Remove from the oven, with a teaspoon apply pizza sauce and add mozzarella cheese.

Add any topping you love.

Insert it back to the preheated oven for 10 minutes until the cheese melts.
