- 5-6 shredded carrots
- 1/2 cup dried cranberry
- 1 chopped hot red pepper (finely chopped )
- 1/4 cup of finely chopped parsley
- Salt to taste
- 1/4 teaspoon black pepper
- lemon juice + grated lemon peel
- 1/4 cup of olive oil
- 1 teaspoon of sugar
- 1/2 cup walnuts

Shred the carrots, Slice the hot red pepper, chopped the parsley.
Place the shredded carrots, cranberries, sliced hot red pepper and chopped parsley in the bowl.
Season and mix well.
Before serving add the nuts.
