Ingredients

  • 2 medium eggplants
  • 1 large egg
  • 4 tablespoons white soft cheese
  • 2 tbsp cottage
  • 1 cup of grated mozzarella cheese
  • Salt and pepper
  • Oil for frying
  • Chives for decoration

Let's do it!

Slice the eggplant to 1 cm circles slices and gently pull out the Middle of the eggplant with a knife to make a ring shape.

Sprinkle on the eggplant rings a little salt and set aside for 10 minutes, rinse and dry.

In a bowl mix the egg and all the cheese, add salt and pepper.

Heat the oil in a frying pan and fry the eggplant rings from both sides.

Place the eggplant rings on parchment paper, fill the rings with the cheese filling.

Preheat oven to 375 degrees. Insert the eggplant for about 30 minutes until filling settles and hardens.
